As for air, protoss options are limit vs z. You'll need phoenixes and stalkers, preferably with blink. Vs other void rays (aka what I did to you), stalkers are generally sufficient.
I went and did this along with my ally and the first thing we did was roast their main buildings. Granted it was 8 void rays (between the both of us), but what the hey... you can't touch that many before the damage is done.
I had another game where my main got attacked by a pair of cloaked banshees-- had an observer sitting there the whole time (no cannon, though) and warped a couple stalkers in and they took care of the rest.
Only major lesson I get from this is I need more warp gates. Most of the time I stop at two and then get forced into building the stargates instead (although I have yet to resort to using carriers extensively). I haven't quite figured out where the Phoenix's aerial shackles spell research is yet, although so far it hasn't been necessary. But there's been several instances where I really needed more than what two warp gates could offer.

I really want to use lings against protoss, but roaches(or hydras)/mutas just seems way more effective.

Phoenixes don't have Aerial Shackles, they have a gravity lift ability. It lifts up ground units except for ultras and other big dudes into the air. So you can exchange lifting a queen between two Phoenixes and the other one attacking it. Also, they start off with the ability (Casters actually start off with most of their abilities in sc2 which imo should change).
As far as warp gates, WB told me you can 1 base 4 gates and go up to 8 gates on 2 bases. I usually stick to 3 on 1 base because I'm also getting a robo or stargate. If I find myself floating a lot of resources I throw down a bunch more gates and expand once or twice.

I've hit platinum in my 1v1 league, woot! I'm at rank 11 atm but not far behind the ppl ahead of me. I want to get top 5 by the end of spring break which starts next week for me. I also recently discovered that phoenix/zealot is viable in pvp to a certain degree and I can't wait to try it out.

I'm at rank 42 right now. So clearly I'm ahead.

Good playing there! Some of these guys have over 400 games

Myself, I haven't been able to complete a single game yet. I've started a few but then something else comes up and I end up exiting the game (I've only played vs. various mods/AI for obvious reasons). Guess modern video games no matter how "new" just don't keep my attention like they used to.
Looks like the rating system is working well. This is HUGE and what has kept SC so alive these past years with ICCUP ect. ELO is the ultimate. I played in a few chess clubs before there was such a thing as the internet and this is the only way to go.
rank 13! Hope you're not superstitious?

I am happy to see Rank 1 as Terran, those patches must be helping.

Current balance issues I believe are in sc2:
No high ground miss mechanic
Protoss don't have any decent anti air (a stalker/archon buff would suffice)
EMP a bit too powerful
Roach/Hydras too pwerful
Nerf colossi damage a tiny bit to compensate the nerf to emp/roach/hydra
No reasearch on fungal growth/emp abilities and they are too easy to get; put them on par with storm tech or put storm tech on par with them

These are the rwo biggest issues, phoenixes don't do nearly enough damage and hydras attack way to fucking fast still.

Browder stated in the interview I attended he was against high ground miss due to the randomness of it. He wanted to exclude "luck" from eSports.

That's a dumb reason, getting high ground in SC1 was pretty important in late game battles and having it could change things significantly.

Additions I forgot to add:
Zerg creep movement bonus should be reduced to 20%
Zergling speed should be slightly reduced so it can't kill probes/scvs just by chasing them
Zergling speed upgrade should get a slight nerf
Zerglings shouldn't be able to spam right click and break past unit walls
